Roasted Red Pepper & Pesto Cheesecake

1 cup butter flavor cracker crumbs (40 crackers)
1/4 cup melted butter or margarine
2 8 oz package cream cheese (softened)
1 cup ricotta cheese
3 eggs
1/2 cup parmesan cheese (grated)
1/2 cup pesto sauce (jar)
1/2 cup roasted red peppers, diced, drained & pureed


mix cracker crumbs & melted butter together
press into bottom 9" spring form pan & bake at 325 degree for 10 minutes
mix cheeses at med. speed until well blended
add eggs one at a time then blend in remaining ingredients
pour into prepared crust & bake at 325 degrees for 55 minutes
run knife around edges of pan to loosen cake
let stand at room temp. to cool
wait until cake is cool before removing sides of pan
